Asthma has been reported in bakers since Roman times. In the UK a baker is considered to be in a "high risk" occupation. This is not surprising when you consider that some studies have shown the concentration of airborne flour dust is more than 200 times the occupational exposure limit.
Many employers have a hard time imagining that something as simple as flour could prove dangerous to an employee's health. Yet flour dust is actually quite complex. It can be made up of a number of cereals, but also additives like raising agents, emulsifiers, artificial sweeteners, coloring, flavoring, gums and gelling agents.
Flour is considered a "sensitizer", which means that workers who are continually exposed to flour dust are at a higher risk for respiratory ailments like asthma and allergic rhinitis. It may also cause other breathing difficulties like bronchitis as well as eye, nose and throat irritation.
Alpha-amylase, an enzyme that occurs naturally in wheat flour and one which is sometimes used as an additive, has also been implicated in baker's asthma.
